Discovering and loving these traditional Danish open faced sandwiches. Originally known as smør og brød which loosely translates as butter on bread, each of these decidedly fancy toppings sit on top of a thin slice of buttered rugbrød, a delicious dense yet fluffy rye bread filled with seeds. There’s chicken salad with apple, mushroom, crispy bacon and gem lettuce, pumpkin with kale and almonds, and crumbed plaice with prawn, lemon, picked tomatoes and micro greens.
