What's Happening On Instagram?We celebrated Easter with Ottolenghi’s magnificent sweet potato bake. Proof that sides sometimes take centre stage. The recipe is as simple as it is delicious. Thinly slice enough sweet potatoes to snugly fit your roasting tin. Mix with 5 or 6 generous tablespoons of finely chopped garlic and sage. Season with salt and pepper. Butter your tin and arrange seasoned sweet potato slices standing upright in tightly packed rows. Cover with foil and bake in a hot 180 degree oven for about 45 minutes. Remove the foil and pour over a cup of cream. Return to the oven for a further 25 minutes. The cream will thicken beautifully to coat the sweet potato. We served this with a roast rack of pork and broccolini. I’d hunt them down at my favourite bakeries. The closest I came one Easter, on holiday at the coast away from home, were Hot Cross Muffins. No yeast required. I think by the time lockdown is over, l will have conquered my yeast phobia. I don’t quite know what I expected but these were glorious. I glazed my buns with orange marmalade, used #Gewurzhaus prepackaged hot cross bun spice mix, and not having quite enough currants added a little freshly diced apple to make up the difference. And before I forget I also added finely grated zest from an orange and a lemon to the mix. My hungry horde descended and devoured them straight out of the oven. Discovering and loving these traditional Danish open faced sandwiches. Originally known as smør og brød which loosely translates as butter on bread, each of these decidedly fancy toppings sit on top of a thin slice of buttered rugbrød, a delicious dense yet fluffy rye bread filled with seeds. There’s chicken salad with apple, mushroom, crispy bacon and gem lettuce, pumpkin with kale and almonds, and crumbed plaice with prawn, lemon, picked tomatoes and micro greens. All washed down with a glass (or two) of akvavit.
