Rich, Dense and Fudgy. Blonde Brownies With Sour Cherries, Macadamia and White Chocolate Chunks.

Brownies are a perennial favourite in our house. Rich, dense and fudgy these blonde brownies use white chocolate instead of  the usual dark and are crammed full of sour cherries and macadamia nuts. Absolutely delicious and incredibly moreish they need no further introduction. Quick and easy to prepare I do hope you try them.

Blonde Brownies With Sour Cherries, Macadamia and White Chocolate Chunks
Makes about 18 pieces.

100g butter
200g white chocolate, broken into pieces or roughly chopped
1/2 cup caster sugar
2 large eggs
1 teaspoon vanilla extract
1 cup plain flour
1/3 cup self-raising flour
1/2 teaspoon salt
2/3 cup whole macadamia nuts
1/2 cup dried sour cherries
1  cup (about 180g) white chocolate chopped into macadamia nut sized chunks

PREHEAT oven to 160C. Butter and line a rectangular 20cm x 30cm baking tin.
MELT chocolate and butter in a heatproof bowl placed over a saucepan of simmering water, stirring until smooth.
REMOVE from heat and allow to cool. Stir in vanilla.
IN A SEPARATE bowl beat together eggs and sugar until thick and creamy.
FOLD IN cooled chocolate mixture, then flour, salt, dried cherries, white chocolate chunks and whole macadamia nuts.
POUR batter evenly into the prepared baking tin.
BAKE for 30 – 40 minutes in centre oven rack position or until crumbs cling to a skewer inserted into the centre. When cool cut into squares. Dust with icing sugar.

    Wow! yummy, I’ll have to try and adapt your recipe

    • I’m thinking about spooning the blondie batter into large Christmas tree shaped cookie cutters. They’d make a gorgeous festive treat. Placing the batter into the refrigerator for a couple of hours to firm up before shaping into balls would also work.

    After going to the gym early morning, now i’m thinking “do i have all the ingredients to make those blondies tonight?….” I may be short in white chocolate… so a quick trip to the supermarket is essential sometime today… 😉

  3. Brownies are a favorite in our home as well and just about every American household. Your blonde version (which you photographed beautifully) with the combination of white chocolate, sour cherries and macadamias makes them very special. Having one (or two) with a cup of hot tea sounds so wonderful to me right now! Thank you for sharing this recipe with us…I do think I will pull these together while we are home next week.

    • Thank you. I hope you try them. I had forgotten its Thanksgiving in your part of the world next week. These are perfect for entertaining as they’re so easy to put together. Macadamias and cherries always remind me of Christmas. We have been making traditional puddings and fruit mince this week so I have masses of dried fruit and nuts in my pantry. It probably seems strange to you that even though it’s sweltering hot over here and summer fruit is in season, we celebrate Christmas with traditional colder climate food.
